INGREDIENTS
1 large bunch kale, thick stems removed and leaves thinly sliced (either Lacinato or curly kale)
2 cups shredded red cabbage (about ½ small head, quartered and cored)
1 small red onion, thinly sliced
1 cup grape or cherry tomatoes, sliced in half
½ cup blueberries (or more)
¼ cup cashews, roughly chopped
¼ cup sunflower seeds
¼ cup goji berries
¼ cup mulberries
¼ cup golden berries
2 tablespoons cacao nibs
2 tablespoons hemp seeds
Salt & pepper to taste
Plus any other superfoods your heart desires
Dressing
1 tablespoon Dijon mustard
¼ cup freshly squeezed lemon juice
¼ cup olive oil
1 clove garlic, chopped
2 teaspoons lemon zest
1 tablespoon maple syrup
Sea salt & pepper to taste
INSTRUCTIONS
Combine sliced kale and cabbage in a large salad bowl. Mix together. Add in sliced onion, tomatoes, blueberries and toss. Sprinkle all the nuts, seeds and superfood toppings. Set aside. In a small bowl, whisk together the lemon juice, mustard, and maple syrup. Add in the lemon zest and chopped garlic. Slowly combine the olive oil to the dressing mixture and blend until well combined. Season with salt & pepper to taste. Pour the dressing over the salad mixture and toss until evenly coated.
